Nearly twelve months ago I went out to dinner with one of my best friends to celebrate his engagement to his beautiful bride to be. Our choice of location was calculated, a wine bar I had been told had a great wine list, and a somm with a personality to match it. The rumours were correct on both counts. The wines were great – only outshone by the hospitality of the somm who looked after us. Cal Lee is the somm at Love Tilly Devine in Sydney’s Paddington district, a fantastic hole in the wall wine bar oozing with character and wine list and menu to match. By night Cal treats the Love Tilly patrons to top shelf hospitality – by day Cal devotes himself to the study of wine. Cal’s story and perspectives are the result of a broad experience across the world of wine service, WSET and studies at Charles Sturt.
